Monosodium glutamate crystals

Monosodium glutamate (MSG) is responsible for the umami or “savoury” taste of many of our foods. I was able to buy a tiny amount at a bulk food store for only a few pennies….can’t recall the last time I bought something so interesting for only a few pennies!

Fantastic. Could you dissolve it and re-crystallize the same. I am also curious if any adulterants of MSG or know ?

    Beautiful work.

Haven’t tried the re-crystalization. But when I first viewed the crystal it was a single large crystal. With some gentle pressure, I was able to shatter it into the pieces posted and get the images you see.

About adulterants, the only ingredient listed is “monosodium glutamate” when I checked at the store.
