Potato is a tuber and modified stem as it stores starch.The potato cells contain starch grains which are colourless plastids known as leucoplasts.To extract the starch the potatoes are crushed.The starch grains are released from destroyed cells.The starch is then washed out and dried to powder. Iodine test is used to check the presence of starch in food stuffs where it turns blue black in colour .After the iodine test a thin peel was observed under the foldscope. My students were surprised looking at the starch grains which was blue black in colour. It was an amazing experience to all of us.
